Ingredients:

  • 1 medium-sized cabbage
  • Half a glass of İpek Fine Bulgur
  • 400 grams of minced meat
  • 1 medium onion
  • 1 teaspoon of tomato paste
  • 1 teaspoon of hot pepper paste
  • Half a bunch of parsley

On top:

  • 2 tablespoons of butter
  • 1 medium onion
  • 2 medium-sized tomatoes
  • 1 teaspoon of tomato paste
  • Salt

Drink sumac juice:

  • 1 cup grain sumac
  • 3 cups of water

Preparation:

Separate the cabbage into leaves. Boil it in salted water until it softens slightly and set aside. Put the minced meat in a large bowl to prepare the filling. Add bulgur, grated onion, tomato paste, finely chopped parsley, salt, and black pepper on top and knead the mixture. Remove the veined thick parts of the cabbage leaves. Cut them in half or in thirds depending on their size. Put the mixture you prepared in the leaves, wrap them, and place them in a flat pot. Melt the butter and fry the diced onion until it turns golden. Add diced tomato, tomato paste, and salt. Fry for a minute or two more and pour the mixture over the wraps. Put the sumac and water in a pot and put it on the stove. When it reaches the boiling point, remove it from the stove. Strain the sumac water and pour it over the wraps. Cook for 45-50 minutes and serve. Bon appétit!
